Dark Chocolate Covered Almonds

Ingredients:


8 ounces 70% - cacao dark chocolate, chopped
1 teaspoon coconut oil
2 cups roasted, lightly salted almonds

Directions:

 

  1. Line baking sheet with wax paper.

  2. Combine chocolate and coconut oil - microwave on 50% power for about 4 minutes, stirring every 30 seconds, until chocolate is melted and smooth.

  3. Stir almonds into chocolate.

  4. Spoon heaping tablespoons of the mixture onto the baking sheet. Let stand until completely set (I put in refrigerator to set). Store in refrigerator. If you want - put coconut flakes on before they set.
